Top-notch white tuna, but in this can it’s the vinegary escabeche sauce that is the star. For guests, I lightly flaked the meat, and served it and all the sauce in a shallow bowl, adding a heavy spritz of lime and shaving the lime’s zest over top. The tuna was one of several choices folks had to make themselves small tacos for a game-watching lunch. It was voted the favorite, and I ended up regretting that I didn’t have two more cans to crack open. Lesson learned!
