I haven’t been a huge fan of Tiny Fish Co products in the past but I decided to give this one a try as I was curious about sole. The ingredient list was also short, which I thought would let the sole really shine. And after having this tin, I’m sad to say that I couldn’t tell you what sole tasted like. 🙁 The strongest flavors for me were lemon and olive oil. There was a lot of olive oil, and while the lemon was a teeny tiny sliver, like maybe an inch, the flavor came through strongly. The fish seemed like a bunch of pieces that were stuck together in the tin but once I started to remove them, it all started to crumble apart? It was very, very, very soft and it didn’t hold its shape at all. Given how assertive the olive oil is, and the strong lemon flavor, the taste was dominated by them and I couldn’t tell you what the sole tasted like… Overall this tin was not bad compared to the other tins I’ve had from this brand, but I also wouldn’t say that I liked it. I’d eat it again if it was in front of me but I don’t think I’d buy it myself again at its full price.

Based on the first review, I tasted several bites right out of the can. It’s true the flavor is subtle—sole is subtle—but I did think well of it. And the Like Family olive oil is tops—yum. I like that both companies are, based on all I’ve read, careful stewards of the planet. I can taste the do-gooder-ness!
Yes, it’s a pricy tin, but for me it’s also a lovely treat. Not an everyday extravagance, but I do think I’ll buy it again from time to time.

Oregon has 9 species of sole and other flounders. While Tiny Fish Co doesn’t specify which variety this is, it’s quite tasty. Unlike the flounder from the Southeastern USA that I’ve been used to, this had a distinctive “fish” taste, with a forward fish note in the fresh olive oil. This was cut delightfully with the lemon – upon opening the tin, they’d placed a half-moon of rind on top. The lemon essence didn’t taste artificial at all and was carefully balanced against the oily, fishy nature of the sole. The texture was on the firm side and excellently prepared.
Given the price, I’d recommend this mostly to fish-heads who’re looking for the next hip thing! It’d also be fun to put this tin in a blind taste test with some other oilier fish (like a mackerel) with a squeeze of lemon.
I give this tin 5/5 for showing exactly how much sole Oregon has.

I don’t know that I have ever had sole in any form before. Opened it to a muted scent, almost earthy with just a hint of lemon. The olive oil was thick and vibrantly colored. The texture reminded me of canned cod (not canned salt cod) but I thought the flavor was slightly stronger than cod. Perhaps I should do a side by side tasting. This was very moist, well flavored with the oil, salt, and lemon and all in all, a very good can. The oil was really nice, lush and flavorful with the salt & oil. Do not throw it away as it would be great over some rice. In fact, this would be a great can to stir into some simple rice. Being lazy, I just mopped it up with some toast.
I know there are a lot of comparisons between Tiny Fish and Fishwife. Small portions, high prices, packed by Ekone, and adorable packaging. But the thing that I keep coming back to is that I just enjoy Tiny Fish much more than I do Fishwife. Everything that I have tried from Tiny Fish, I have really liked and would or already have purchased again. This was another one that I really liked, but I still think that their lemon & dill octopus and chorizo spiced mussels are even better.

My first time having sole, and this definitely will not be my last. The flavors in this tin were very mild, bright, and refreshing. It did not smell fishy nor have the metallic fish taste people new to tinned fish may be used to from low end grocery store options.
The quality of the sole, based in the comparisons to other tinned fish I have, was very beautiful. It was firm, but flaked perfectly and had a very mild taste. The oil was fruity and citrus forward helping it feel light. I also did not get an overwhelming salt taste from this tin. Everything was so well balanced.
I tried it directly from the tin first. I enjoyed the flavor and texture of it so much I just decided to have it over crackers. I found myself dipping the crackers in the oil once the sole was gone. So, as others have said, definitely save the oil.
I plan on purchasing this tin again. Saved it to my fishlist and everything
