Most of the mussels in the tinned fish world are Mytilus galloprovincialis, aka the Mediterranean mussel. But not all. There are also a couple of producers using Mytilus edulis, aka the Blue mussel. And one of the companies using the Blue mussel is growing them in colder, northern waters which leaves them smaller and sweeter at harvesting time.
