In the American tradition sardines are sometimes viewed as taking the worst of what’s available and selling it on the cheap. But in the European tradition the fresh products are in overabundance during the peak of the harvesting season, so they take the very best of what’s available and can it so that the bounty of the sea can be enjoyed during the months when fresh is not available. These 2020 season fatties are packed in one of Portugal’s best EVOOs, from Occidens.

    This is the first vintage tin I’ve tried; it was one that Dan picked when I had room leftover in the shipping box and gave him a budget to fill it with tins I haven’t previously ordered. I haven’t had any non-vintage tins from this brand to compare to, but comparing to other fat sardines like this (just 3 huuuge fish in the tin) I gotta say they were way tastier than I expected. I normally prefer much smaller sardines like sprats. I think with larger fish the oil often doesn’t penetrate too far into them and they taste fishier and can feel a bit dry to me. Not the case with these though; these had all the flavor and texture that I like about small sprats but in a much larger fish. I can only assume that’s due to the longer amount of time they had to soak in the oil and suspect they’d have been even better if I let them age further. So if you’re on the fence about vintage sardines, I say give ’em a try. I’ve already got one other vintage tin that I’m going to be holding onto for a while and this experience has me very excited about trying it in the future.

    Big chonkers. The oil… wow! It smacks you across the face with richness and flavor. I planned to enjoy these straight up, but eventually had to go get a lemon to cut the really concentrated flavor of it.

    The meat has a really good texture, but they were surprisingly scaly, and had big bones & fins. If you don’t mind bigger fish, you’ll love these.

    Because of how much they pack a punch, these might be a really good fish to add some toppings to. Lemon was nice. I think these would also go great in a caprese with vinegar and tomatoes.
