A customer told us a lovely story about a trip to France they remembered in great detail, and one of the details involved potted mackerel. We smiled and then said, hey, wait a minute, we have all sorts of rillettes, why don’t we have any mackerel? Problem solved. And, bonus, whole grain mustard. 8% of this jar is whole grain mustard. Mustard and mackerel, now that’s a great combination.

Upon review, I’m wondering if I am not the right pick for this rillette. I did have it in a couple ways, including on some crackers with a variety of pickled toppings from my fridge (capers, gherkins, pickled onions, etc.) and thinly spread on some toasted baguette. I found both applications too sour (my bad — definitely made that worse in the first way I prepped this), but I didn’t have anything in my fridge to help me mellow it out that paired well. Perhaps if it was used as a thin spread on a BLT or something — that could be good!
