I’ve previously enjoyed Jose Gourmet’s trout in olive oil, quite a lot, but this is indeed a step up. The fillets are still flawless beauties; I spent time just admiring them, tipping the can a bit to have the skin catch the light. But then its on to the flavors, and they are subtle, yet present, and they complement the fish perfectly. The smoke note, I ought to mention, is restrained, which I like. It most definitely doesn’t overpower the trout or the herbs. I had the tin and a drizzle of its oil over a bed of fresh polenta. Not sure that’s the ideal fit, even with lightly-smoked trout, but it suited me just swell sitting at my desk for lunch.
