I have never had a sardine pate before and I am hooked! It reminded me of nothing so much as very high quality chopped chicken livers, but with a greater depth of flavor and richness. In fact, it was so rich I tried a bit of fresh lemon juice with it and that was how I will probably eat it going forward. Wonderful!

When it comes to pate made from land-based animals, there are certain flavor notes I do not care for. With this sardine pate, you taste bbq and sardines! These are the dominant notes and the charcoal-like bbq-ness is 10/10 on the strength scale. Even pairing with acids and other strong ingredients, I could not find a complement to balance this pate. The texture is buttery smooth so anything one would want to combine this with it will melt right into. A little goes a long ways.
