This is a spectacular anchovy. If you don’t like these, you don’t like anchovies.

I opened the tin as soon as I had a chance even though it was late and I wasn’t hungry. I was too curious to wait. There were 9 medium-to-large fillets in olive oil, together with a tiny slip informing me that the anchovies had been hand-packed by Ana.
These are event-worthy anchovies. They are beautiful, glossy, and have very few bones. They are firm without being tough. Of course they are fish, but they aren’t fishy. They have that Parmesan-like flavor that I love in a good anchovy.
I immediately ate 3 on tiny toasts with butter (very good, noticeably better than my workaday Cento or Flott), 2 the next morning on buttered English muffins with smashed avocado (devastatingly delicious), and 2 the following day on buttered English muffins with soft scrambled eggs and arugula (also devastating). Just 2 more left, and I am going to make them count!

Amazing anchovies! I served this on top of pesto pasta and the combination was great. I wish I could afford to eat these every day — still very worth it for the taste. Highly recommended.

I thought about splurging on their Serie Limitada but decided that I was not destined for a better anchovy than this. Rich & meaty, with a flavor that lingers, enticing you to take one more…Be staunch & save some for tomorrow, to round out a salad or fritatta, or for a picnic with good bread & wine. Or give in to temptation.
